Carob (Ceratonia siliqua) is part of the legume family, along with notorious members of this class (soy, beans, lentils, lupine, peas, beans). The pod-producing tree can reach a height of 12-15 m.
It is known and appreciated since ancient times (thousands of years BC), being used as a basic and complete food, by the poorest social blanket, due to its extremely low cost price. It induces alkalinity in the body, being an alkaline food that does not stimulate gastric acidity.
It does not need to add sweeteners to give it a good taste. It has its own sugars, similar to those in fruit, with a discreetly sweet and pleasant taste, it does not contain gluten or lactose.
It represents an important source of calcium, has a low glycemic index, inhibits the development of pathogenic intestinal bacteria (especially E. coli) and restores normal peristalsis, through the content of tannin, gallic acid and pectins.
Carob flour is an important ingredient for pastry products, successfully replacing cocoa.
