Description
Just as Europeans use potato or cornstarch in their cooking, South Americans and Asians also use tapioca. Unlike local starch, tapioca stands out for its versatility.
It is grain or legume free and contains no gluten or other allergens. However, it is not suitable for a low-carb diet - it contains as many complex carbohydrates as potatoes.
It is popular with gluten-free, lactose-free, paleo or low-cholesterol diets.
How to prepare dishes from tapioca pearls
You can use tapioca pearls as a thickening agent in soups, you use them to prepare cream for fruit cakes or a delicious natural pudding. There are many tapioca pudding recipes. But be careful. Tapioca pudding thickens as it cools, so don't boil it too hard. You can also use tapioca instead of rice. Like legumes, soak before cooking.
